From the beginning of time, it seems olive trees have had their place in the tribula­tions and celebrations of humankind. Throughout history they have offered food and shelter to people. They have been symbolic representatives of peace, security, and plenty. Olive trees are believed to have originated around the shore of the Mediterranean well over 5,000 years ago. Today, the United States annual production of olives, chiefly from San Joaquin Valley of California, is close to 170,000 tons. Olive leaves contain phenolic compounds that have been shown to exert potent biological activities including antioxidant activity, antibacterial, anti-viral, and anti-parasitic actions. It has long been known that when olive pulp was crushed and washed, where the wastewater was dumped, the soil was sterilized.


 
FSS Olive Leaf Extract PF is produced via the fermentation of the leaves of the olive plant with the bacteria lactobacillus lactis. This fermentation process allows for the isolation of the phytochemicals and phenolic compounds – specifically oleuropein, flavonoids, anthocyanins and tannins which demonstrate unique an­tioxidant properties, as well as antibacterial, anti-viral and anti-fungal activity.

 

 

Olive Leaf extracts have been shown to inhibit the production of Lipid Hydroperoxides. It has also been shown to protect the heme group of the catalase enzyme from degradation and modification of its absorption spectrum when introduced to a hypochlorous acid. Olive leaf extract in combination with Olive Mill Waste Water (OMWW) have superoxide-scavenging properties that were tested in a cell-free system and revealed that the extracts were able to remove superoxide anions from the reaction medium.
