Spicy cuisine can be found all over the world, and while people may prefer varying intensities, everyone will agree that the stimulating sensory experience is what they enjoy the most. The pepper species Capsicum frutescens is broken up into two different types of plants: the Tabasco chile and the Malagueta pepper. The Malagueta, which is Portuguese for “spicy,” is grown in Panama, South America, Mexico, and the Carribbean, while the Tabasco is grown in Central America and Colombia and shipped to Louisiana. These peppers grow on a shrub that grows anywhere from one to four feet high.

The active ingredient in these peppers is capsaicin, which is an oil-soluble active fraction. Capsaicin interacts with sensory neurons by binding to receptors in the brain called Vanilloid Receptor Subtype 1 (VR1). This receptor is an ion channel which, when stimulated by heat, allows cations to travel into the cell. When enough cations enter the cell, the neuron depolarizes and a signal is sent to the brain, causing us to recognize a warming sensation.

To create a functional ingredient that also provides a warming sensation, we fermented the macerated fruit of Capsicum frutescens with Lactobacillus. During the fermentation process, a biotransformation takes place, which creates a capsaicinoid that has increased solubility, additional cell metabolism-increasing factors, and anti-irritant properties.
