The songyi (Tricholoma matsutake) mushroom is considered to be a delicacy in Japan. Commonly referred to as “pine mushroom,” the fungus grows symbiotically with the roots of several trees in forests. Originally, the mushroom was most commonly found beneath red pine trees in Japan. Due to a nematode infestation, the availability of the mushroom has decreased in Japan over the past several decades.1 The pine mushroom is well known for its unique indescribable aroma and flavor; it is often cooked in soups, rice or broiled. The pine mushroom contains all nine essential amino acids required by humans and is also a relatively good source of the following nutrients: phosphorus, iron and vitamins, including thiamine, riboflavin, ascorbic acid and niacin.2
Pine mushrooms are renowned for their remarkable anti-aging properties, making them a sought-after ingredient in skincare formulations targeting agerelated skin concerns. One of the key contributions to anti-aging comes from the antioxidant capabilities of pine mushrooms.3 These antioxidants play a crucial
